This is for those of us who would like to increase our fruit intake. This banana loaf contains blueberry. You may substitute the blueberries with strawberries or raspberries. Ingredients 1 ½ cups whole wheat flour 1 teaspoon baking soda ½ teaspoon baking powder ½ teaspoon salt 1 teaspoon ground cinnamon ½ cup coconut sugar ¼ cup applesauce unsweetened ½ cup coconut sugar 2 large eggs 2 teaspoons of vanilla extract 3 overripe bananas 1 ½ cups of blueberries Baking Instructions Pre-heat the oven to 400F. Combine flour, baking soda, baking powder, salt, and cinnamon. In a separate bowl, mix beaten eggs, vanilla, sugar, oil, and applesauce. Add the blueberries and bananas. Combine your wet and dry ingredients. Pour into the pan and bake for 65 minutes.
