9. Zucchini Banana Bread

The ultimate banana bread made with vegetables! It is also filled with healthier fat options by adding a full-fat Greek yogurt. The zucchini is what gives it extra moisture. Ingredients 1 large egg ½ cup light brown sugar 1/3 cup liquid-state coconut oil ¼ cup granulated sugar ¼ cup Greek yogurt 2 teaspoons vanilla extract 1 cup all-purpose flour ½ teaspoon baking powder ½ baking soda Pinch of salt 1 cup grated zucchini ¾ to 1 cup of mashed bananas ½ cup walnuts Baking Instructions Pre-heat your oven to 329F. Grease your pan. Mix eggs, coconut oil, brown sugar, granulated sugar, vanilla, salt and greek yogurt. Add flour, baking powder, and baking soda. Stir lightly and then add zucchini, banana, and walnuts. Bake for 60 minutes.
