2. Chocolate Banana Bread

This recipe is a mixture of rich chocolate and sweet banana. You can leave out the chocolate chips to lower the sugar content.

Ingredients

2 cups overripe mashed bananas

2 ½ teaspoons of pure vanilla extract

1 tablespoon of vinegar

¼ cup of oil

2/3 cup of pure maple syrup

1/8 teaspoon of uncut stevia

1 ¾ cup of spelt flour

1 teaspoon of baking soda

¾ teaspoon salt

¾ teaspoon baking powder

½ cup plus 2 tablespoon cocoa powder

Baking Instructions

Warm up your oven to 329F. Combine the banana, vanilla, vinegar, oil, stevia, and flour. Mix thoroughly until smooth. Mix baking soda, baking powder, salt and cocoa powder in another bowl. Combine the first bowl with the second. Pour into greased pan and bake for 35 minutes.
