6. Cauliflower Bolognese

You don’t have to be a vegetarian to want to cut down on how much meat you eat. Whether you’re worried about cholesterol, the environment, or your weight, substituting a meat dish you love for a vegetarian one is easier than you think!

This cauliflower bolognese uses shredded cauliflower as a substitute for ground beef. It might not sound immediately convincing, but grated cauliflower gives this dish the same texture that cooked ground beef provides.

Use a grater or food processor to chop the cauliflower into rice-sized pieces. Follow your favorite bolognese recipe and simply sauté the cauliflower rice before adding the tomatoes. It’s easy, delicious, and healthy!
