16. Artichokes

Though they can take a bit more work to prepare than other veggies, artichokes are fiber-rich, savory, and contain plenty of magnesium. A medium-sized artichoke—roughly 120 grams—has a mere 64 calories while boasting 50 mg of magnesium, which is about 12% of an adult's recommended daily value.

On top of that, the artichoke has seven grams of fiber, about four grams of protein, and a healthy amount of vitamin C.
