Slicing pie before it is cooled turns into a mess, with filling running out of the edges and possibly collapsing the top crust. Wait until the pie is cool before slicing and serving. A nine-inch pie can be sliced into either sixths or eighths. Make the first slice halfway across the pan from one side to the other. This will usually provide more uniform pieces than slicing out only one that is pie-shaped.
