This roasted pumpkin recipe is ideal for a quick side dish. Select one small pumpkin or use a quarter of a large pumpkin. Preheat the oven to 400 °F. Scoop the seeds and insides out of the pumpkin with a metal scoop. Set the seeds aside for roasting. Cut the pumpkin into 1 inch thick slices, then place the slices on a baking sheet. Drizzle the slices on both sides with 2 Tbsp of olive oil and sprinkle with 1 tsp of cinnamon, 1/8 tsp of nutmeg, 2 Tbsp of brown sugar, and 2 tsp of sea salt. Bake the pumpkin slices for 18-20 minutes.
