1. What You Need

  • 1/4 cup onion, chopped
  • 1 clove garlic, chopped
  • 1 Tbsp olive oil
  • 1 cup frozen mixed vegetables (any type)
  • 1 rib of celery, chopped
  • 1 carrot, peeled and chopped
  • 1 small potato, peeled and chopped
  • 1 can diced tomatoes
  • 1/2 tsp Thyme
  • 1/2 tsp Parsley
  • 1/2 tsp oregano
  • 1 Bay leaf
  • salt and pepper to taste
  • 1 quart (4 cups) beef, chicken, or vegetable stock
  • 1 cup cooked barley or rice
